Instructions on Garden Chicken

Ingredients

  • 1.5 lb Chicken Breast, Cubed
  • Extra Virgin Olive Oil
  • 1 Zucchini, Sliced
  • 1 Bell Pepper, De-Seeded, Sliced
  • 1/2 Onion, Sliced
  • 1 Cup Grape or Cherry Tomatoes
  • 1/3 Cup Pesto
  • Juice of 1/2 Lemon
  • Lemon Rind Zest (optional)
  • Pine Nuts (optional)
  • Fresh Basil (optional)

Instructions

  1. Season chicken with salt and pepper. Sear in olive oil for 3-4 minutes per side, then set aside.
  2. Sauté zucchini, bell peppers, onion, and tomatoes in the same skillet for 6-7 minutes until softened.
  3. Mix pesto and cream, add chicken back to the skillet, and pour the mixture over. Cook on medium-low for 1 minute.
  4. Remove from heat, add lemon juice, zest, pine nuts, and fresh basil.
  5. Serve
