Instructions on Garden Chicken
Ingredients
- 1.5 lb Chicken Breast, Cubed
- Extra Virgin Olive Oil
- 1 Zucchini, Sliced
- 1 Bell Pepper, De-Seeded, Sliced
- 1/2 Onion, Sliced
- 1 Cup Grape or Cherry Tomatoes
- 1/3 Cup Pesto
- Juice of 1/2 Lemon
- Lemon Rind Zest (optional)
- Pine Nuts (optional)
- Fresh Basil (optional)
Instructions
- Season chicken with salt and pepper. Sear in olive oil for 3-4 minutes per side, then set aside.
- Sauté zucchini, bell peppers, onion, and tomatoes in the same skillet for 6-7 minutes until softened.
- Mix pesto and cream, add chicken back to the skillet, and pour the mixture over. Cook on medium-low for 1 minute.
- Remove from heat, add lemon juice, zest, pine nuts, and fresh basil.
- Serve
